Actually, they _do_ use Keynote, but since they also have lots of money, they can simply add television hardware/software to add other video layers (like the picture in picture iPhone view) etc. While you see only Steve Jobs doing all the stuff, my guess is there's a whole team working the cameras, directing the thing etc.

Maybe Keynote '07 will add some things like that, though. Would be nice.
