Right, Your device is half stuck in 'DFU' mode.
What you will need to do is put it in the proper 'DFU' mode.

To put your iPod in DFU mode: http://www.youtube.com/watch?v=Rb_ss0bljHY
Then iTunes should detect it - Restore normally.
Then it should restore like normal.
