I was playing Myst, then the screen started acting up a bit (slightly brighter in the middle 1/3 of the screen), a minute later the screen went all white.
I've tried putting it to sleep, I've tried connecting it to my computer. From what I can tell, the iPod runs fine, it just doesn't display anything.
Anyone know how I can reset this? Preferably without resetting all the software and settings.

Have you tried a reboot (holding the sleep and home buttons simultaneously for 10 seconds)?

Yes. It then goes black and turns on again, just as it should, but the screen is still bright white when it is on.
Seems this is a matter only with the screen though.
When I turn it on, I can slide off the screen lock (can't see it, but I know where it is), press the Music button and press where I guess artist names, album names and song names are, and music will start to play. Obviously it works, the screen is just messed up.

I've tried both rebooting it and I've tried connecting it to my Mac. No effect.

I had the same problem with my iPod Nano (4th generation).
This happened after updating the latest firmware.
Took it to the Apple store and they told me that the screen was kaput.
Result - A new iPod nano (it was still under warranty)

Right, Your device is half stuck in 'DFU' mode.
What you will need to do is put it in the proper 'DFU' mode.

To put your iPod in DFU mode: http://www.youtube.com/watch?v=Rb_ss0bljHY
Then iTunes should detect it - Restore normally.
Then it should restore like normal.
