What exactly are you wanting to do with the server?

To view those media files using the Mac you shouldn't have any problems.
Any Windows Server version will do - 2003, Windows Home Server (it's (http://en.wikipedia.org/wiki/Windows_Home_Server) free (http://www.microsoft.com/windows/products/winfamily/windowshomeserver/eval.mspx) - or at least the 30 days limit wasn't controlled by any means earlier, in case your PC system didn't come with one of these to start with), 2008...
Which Windows Server and which Mac OS X (10.x.x?) would you be using?

You don't even really need Windows server any windows box with files shared on the network should do the trick. Should be able to set a folder as shared and then proceed to access them from any computer on the network.
