So it looks like my iPad is getting here 2 days before the iMac. My question is if I start using the iPad and downloading apps, will it cause any issues when I plug it into the iMac at a later date? I already have an iTunes account.

Nope, but you'll need a Mac or Windows machine in order to activate the iPad first. Otherwise, it'll only show the "Connect to iTunes" screen.
