I'm currently using the non-server version of OS X (Lion) and I want to run the calendar server, which I believe requires getting the server version. Is it possible to upgrade my existing system, or do I need to wipe the disk and start from scratch?

No you dont have to scratch from start just download application server software and double click it to install the server
