Replacing hard drives in Xserve

We have a semi-old Xserve that needs hard drive upgrades. It is currently in use running 10.4 and configured with 2 mirrored 160Gb drives. I want to replace them with two 500Gb drives.

What is the best way to do this? I don't want to loose any data and I don't want to setup all the users again.

Any advice?
