Help recovering old iPad backup from Time Machine

I have a Time Machine backup of my iMac hard drive from last Saturday. I want to go back in Time Machine, pull the file which has my iPad backup, then restore this backup to my iPad.

Unfortunately, when you connect the iPad to iTunes, first thing it does is sync and backup your iPad. This OVERWRITES your iPad backup, so if your iPad is screwed up, you just backed up your screwed up settings.

I have disables sync on connect and I can reset my iPad to factory settings just fine. The final piece to the puzzle, however, is to get the iPad backup from last Saturday via Time Machine and then force a restore using this backup.

Can anyone give me detailed instructions on what file I need to recover and maybe a step by step to make iTunes use that to force a restore?
