iPod Video Woes!

Hello All!
While fixing my old iPod video, I thought the process of replacing parts was relatively simple, so I decided to buy two other broken iPod videos. Much to my chagrin, I ordered new hard drives for all 3 iPods from ebay, only to have them not work. The iPods appear in the iTunes window and are recognized, but iTunes always prompts me to restore them. Upon restore, the iPods do everything that they are supposed to, but when they are finally done the message just prompts me to restore them again. On one of the hard drives I can actually sync songs, but it never turns on and freezes in the apple screeen. I don't knw if I possibly bent the hard drive cables too much. I have already invested so much money and time into these that I have to come up with a solution! I was thinking about buying an IDE to 1.8" hard drive connector to connect the hard drives to my computer and test them. Are there any solutions to these problems other than the iTunes restore? Thank you!
