VPN and Dynamic DNS Help!

I'm trying to figure out how to configure the 10.3 Server (we're a non-profit - no money for tech updates ) to allow VPN connections while having a dynamic IP. I have an account at DynDNS, which worked briefly (I still need to work on configuring things), but only if I had the "Web" server enabled on the server, and that is a separate and (as I understand it) far less secure mode of file access.

I'm not shy of the command-line, but this is somewhat new territory. Also, I'm setting this up for someone who has no desire to ever use the command line. Ever.
