Saving Documents on 10.4.2

When I go to save a document in any application, I am just allowed to put it in the "Documents" folder. For example, I am saving a doc in Word and want to put it into a folder within the documents folder. No can do. Only allowed to go as deep as documents. I do have th options to put it on the hard drive or the deskto, but what good is that. What gives? Any solutions?
Thanks!

Have you tried to click on the small arrow on the left of the field in which you type the name of the file you're saving?
