Print settings crossed out

Print settings crossed out

I have an Epson 3000 hooked up to my iMac Dual processor running Tiger 10.4. I have downloaded the new driver but the "Print Setting" and "Color Management" in the printer features is crossed out. We can print to the printer but in doing films we cannot get a black print. I attribute it to not being unable to change the "Print Setting".
Any ideas?
