I recently did a clean install of Tiger 10.4, and have run all the software updates.

What I can't seem to find is the field that will let you select which outgoing mail server you want to use in a new e-mail?

Can anyone tell me what happened to this? I know the old version of mail.app had a place from which to select it...?

Did they remove that feature(I hope not), or am I just not seeing it?

You can setup and choose the servers in the Preferences>Accounts

I know how to set up the servers in Prefs>Accounts, but there used to be a menu in the previous version of mail that allows you to choose which outgoing server you want to use from a new e-mail.

My situation is this, at home I have broadband that does not require outgoing smtp auth. At my office, our ISP doesn't allow relaying so you have to use their outgoing SMTP settings to send e-mail. I used to be able to select which outgoing server I wanted to use from a new e-mail I was writting. That is the feature I am trying to find in the new mail.app in Tiger.

Did they take it out, or am I just not seeing it?

You didn't miss it, it's not a feature of Apple's new Mail. A lot of people would like to have this.
