I did an erase and install of Tiger, and now would like to reinstall the Classic environment.
My computer is a G4 flat panel iMac (the kind that's built like a desk lamp.) It came with one installation disk. When I open that, there is a folder called Install Applications and Classic Support.
I am reluctant to choose this option because it only offers an Easy Install. I am worried that Easy Install will overwrite some of my existing 10.4 applications (e.g. Safari, Mail, Stickies, etc.) I need the Classic folder, but no software that already was installed under 10.4.
Can I go ahead and run the Easy Install without replacing new applications with earlier versions?

yes, of course, no danger for your Tiger applications.
If you have fears, juste have a look to Apple support page about Classic and Tiger:

Thanks, Philippe. I did check the Apple site but couldn't find anything on this exact issue.
But - If I go ahead and select Easy Install, won't it write copies of Mail, Safari, etc in my existing Applications folder? Or does it only install OS 9 versions of the software?

Normally, if you double-click "Install Additional Software", it will install, after some questions, the Classic components.
I must confess I never install Classic on Tiger, but did the equivalent operation in Panther.

Just a little followup to my feedback form earlier today. I have since found an Apple document that addresses this problem: Article ID 304468. It never appeared when I searched for Classic restore (with many variations of the search terms.) But today I was looking for iPhoto restore and there it was. The same article covers both topics.
In brief, Tiger won't restore from the disks that came with the computer. It will ask you to insert the disk that is already in the drive. The only work around is to erase Tiger, install 10.2.8 and associated applications (including Classic), then update the OS using Tiger. I don't need Classic that badly!
Maybe this will assist you if the question arises again.
