Description:
I want to pull all the data off a 2 gig HFS HD from an 040 Centris 610 machine and transfer it to a new G3.

A. What's the easiest way?

B. Can I connect the old drive to the internal CD rom connector on the G3, boot, convert to HFS + on the old drive with "Plusmaker" then copy the data over? Will the cable connections be compatible?

Hi, probably the easiest way to do it would be to connect the two
computers on a network (either Ethernet or Localtalk) and copy the files
that way. WRT the second question, maybe. It depends on if your G3 has
a SCSI controller. It should be possible if it does, but using plusmaker
shouldn't be neccesary -- MacOS understands both HFS and HFS+, and
if you just want to access the disk, no need to make it HFS+ first.
