Open your com.apple.dock.plist (~/Library/Preferences/com.apple.dock.plist) file in your favorite text editor. Scroll down almost to the end and you'll see a key "<real>xxx</real>" where xxx is the size in pixels. Apparently you can't go over 512. That one was set at 256.

Have fun

Interesting indeed. Quite amusing at the same time.

However, I am more interested in all the stuff you have on the OSX toolbar menu bit at the top of your screen.

What's the eject icon do? The Lock icon? etc?

From left to right:
Searchling- Google search tool (freeware, found on versiontracker)
MenuMeters- Shows network, memory, disk, and cpu usage (freeware, found on versiontracker)
Eject.menu- Ejects disk drives
iChat.menu
Keychain.menu- Lock/unlock keychains and activate screensaver
Displays.menu
AirPort.menu
Sound.menu
iSync.menu

How do I enable the Eject one?

I have eject.menu in System/Library/CoreServices/Menu Extras
but it doesnt appear to be enabled.

How do I do to get the Keychain.menu item in my toolbar ? It's not in my list of Menu Extras.

Open Keychain Access. Under the View menu select Show Status in Menu Bar.

To remove Apple menu extras just command (Apple)-drag them off the menu bar. Third party menulings must be quit.
