I was able to procure a USB-to-PS2 adapter and a PS2 keyboard. So I am back in business on the mini.

The first time I booted, it asked me if I was using a bluetooth keyboard.
I'm trying to avoid having to do that, but yeah that's obviously one solution.
While trying to delete the pairing with my phone, I accidentally deleted the pairing with my Apple Bluetooth keyboard. Oops. No problem. I'll just re-pair them. Tried it, and it asks me to type in the 6 character code. I acknowledge, but for some reason it would not receive the keystrokes...
