Did you format the external as Mac OS Extended with Disk Utility before trying to install OS X on it? If your Mac is an Intel you'll need to choose GUID Partition Table from "Options". http://www.kenstone.net/fcp_homepage/partitioning_tiger.html#top

It is also good to defrag when editing videos too.

What happens when the games are installed and played from the startup disc? Sounds like some of the games are cpu intensive. What are the specs of your Mac? Which games are creating problems? iStat Pro will show CPU, RAM, Temps and fan RPMs.
