It is not in the export menu as it is in InDesign. You just do a save as and the dialog that pops up there will allow you to swich to whichever version you want in a pulldown menu on top. You can save all the way down to AI 3, I use it every day.

blah my biggest complaint when it comes to removed features is that when I cmd+tab to flip through applications I have to hold the shift key to get it to wrap around, the arrow keys don't do it anymore. with running 2 versions of the OS it will be hard to train myself NOT to use the arrows anymore.
