Audio Sampling

What application would you guys tell me to use if I wanted to do some sampling, it would have to have multiple channels or whatever thingies where I can put sound on (copied from other audio-files). I basically want to make a new song out of old ones ... Any suggestions?

Do you need it to be OSX ?
If not, check Sound Edit.
If you do, check Peak.

I'll try Peak, what I would be looking for is sth like Amadeus II (which I have) but with more channels ...
