change highlight color of Finder sidebar

Why is it when you change your appearance and highlight color to "Graphite", the highlight color of items in the Finder "Places" sidebar remains "epileptic fit" blue?

"highlight color" refers to highlighting text, not sidebar appearance. You could have a look at ShapeShifter if you want more control over appearance.

This is something that's always bugged me as well. I figure that if you pick a certain highlight color, the highlight color on the sidebar should change as well. This was especially annoying for me when I used the Graphite theme with a greenish background. I had selected the color for the highlight to be green to match the background, but the sidebar was always blue. For me, that inconsistency was quite annoying.

I like the theme used in Mac OS X by default, but I think something as simple as the highlight color should be consistent and changeable by the user.
