configure script options with fink

I am trying to build the pure-ftpd server on my computer with fink but this question applies in general to any fink installation. The question is simply how to set switches such as --enable-something or --with-nothing for the ./configure script using the fink install command. I am not sure if this can be set either in an enviroment variable or as a variable in a specific configuration file.
