I've seen that the brushed metal of iTunes is not the same as the one of Safari (or Finder). Is one aluminum and the other titanium ?

iTunes is still a carbon app. Carbon apps cannot use standard brushed metal. As a result, they look fairly different.

And QuickTime Player 6.4 has probably the most 'modern' version of Brushed Metal. I hope the other apps (and Panther) get this version soon, too. Looks better imo.

iTunes's version of brushed metal also has that nifty gradient that other programs lack.
