Editing Address Book names

I want to delete the surname of an Address Book contact so as to make the name in an email "To" box appear more personal. Trouble is, after doing this I find Address Book has reverted to the original full name the next time I open it. How can I fix this?

Delete the offending entry in Mail's Previous Recipients window.
