I have installed Mac OS X Server v10.3.9.
When I open "Server Admin", under "System -> Hardware" I find "Interface Information". It contains:

Name: en0
Family: IPv4
IP Address: 192.168.1.2
DNS Name:

What must I change in order to assign a "DNS name"?

Do you have the DNS server hosted on that server? If so, create the records in both forward and reverse zones and point the server to itself in system preferences.

In Panther, you can modify the /etc/hostconfig file to include the hostname - in Tiger, you shouldn't do that, use scutil instead. :)

Remember, you need reverse DNS probably to do what you are after, if Open Directory is involved and if your office uses MSFT DNS you will need an Admin to do forward and reverse pointers, simply naming a server won't register it in DNS.
