G4 Hanging

I have a G4 with a new OWC 1.4 GHz processor and it's running smoothly (10.3.7). BUT, I still have a problem (with the previous processor and with this one) with the finder hanging for 5-10 seconds whenever it accesses my firewire drive or my Xserve over an Ethernet LAN if I have not recently accessed these drives. I have Energy Saver set to never sleep the sytem.

Does anyine have any insights into what the problem is?

Sorry if this is the wrong place to post. Tis is my first post and I'm just becoming familiar with the forums.

The drives can still sleep, even with the never sleep setting checked. It defaults to 180 minutes in that case, and if there's no disk access in that time, it'll still sleep.
