It's very simple. In terminal, type:
sudo diskutil enableJournal [Mount Point|Disk Identifier|Device Node]
Replacing the info in brackets with the drive or RAID you want journaling enabled on. You can use disableJournal in the same way to turn journaling off.
Oddly I've noticed fewer RAID-related kernal panics on my Xserve with journaling enabled. Just FYI.
