Mac OS X Icon Tutorials

Does anybody have any good icon tutorials for Mac OS X? I've used the one on XIcons.com but it's only really useful for spheres. I want to make more advanced icons, like Pixeljerk on XIcons.com.

P.S. Has anybody made a new ResEdit icon so I can paste it on my original so it isn't chunky in the dock? Thanks.
