There is a proggie on versiontracker.com called EnergyX that brings back scheduled startup and shutdown. Its shareware, I think.
Alternatively, you could put a command into your crontab (edit the /etc/crontab file. If you need a little guidance, enter "man crontab" at the terminal)
You'd need the command-line method to restart cleanly ... or you could call an AppleScript. I'd be able to help you out a bit more but I'm without my iBook this week.
