Where do these "users" come from?

I opened the info window of the Macintosh HD and wanted to check the "Ownership & Permissions". When I open the "Details" and activate the drop down list of "Owner", I first see the 3 accounts that I have set up, then one account called "system" and after a light separator a list of accounts, users, groups or whatever that I have no idea who/what they are and where they came from: cyrus, daemon, eppc, mailman, ip, mysql, nobody, postfix, qtss, etc.
 
Those are small programs that run in the background. I'm not sure what they do with your files and how they affect their permissions.
 
Those are UNIX "Users" to give UNIX programs certain permissions.
Don't worry about them - just don't try to remove them either.
