We don't use SMB, only SMB for the fear of what the SMB protocol will do to our files. All our OSX Mac users connect to the shares which are shared by SFM, using AFP.

We finally managed to find the roout cause of this problem. It was down to Version Cue. We went into PhotoSHop preferences and unchecked/disabled the Version Cue option. Since then, we have had no further lagging/delays etc. Hope this helps someone else !
