Is there a superior way to do backups with the split BootCamp setup on an IMAC? I will be working with an 80GB SimpleTech external HD. Thanks in advance.

I'm not to sure about what you mean by superior because I don't know how it's setup currently. But I'l try shooting a suggestion at you
Format it as FAT32 so that both mac and windows can read it. Then you can use the windows backup utility or a a 3rd party software to back it up your files in windows. Since I am more of a Windows person myself, I'm not to familiar with backup utilitys for macs however I'm sure that you can simply google it
