plist files aren't going to add up to more than a few megabytes, maybe 100MB or so. It's not even worth the time, as that would add up to a savings of 0.1% on your multi-gigabyte-sized hard drive.
Caches that aren't needed are cleared upon restart -- have you tried a simple restart lately?
Things that take up the most room are user-created files: music, movies, pictures, etc. You may want to invest in an external hard drive to move some of this stuff onto.
