Choosing what app. opens certain file types?

I just installed the new version of Pages and I would like to have it open my old Appleworks docs when I double click on them. I want to keep Appleworks on my drive for the time being. Is there a system setting to make Pages the default application for Appleworks documents?

Also, whenever I doulble click on a pdf document it opens with "Preview." Without getting into why I prefer Acrobat, can someone tell me how to make it the default app. for pdf docs?

OS10.4.10; 500mhz Sawtooth; 1.5 gigs.
 
1) Right click on the file you want to open in Finder.
2) Choose "Get Info"
3) Under the "Open With" choose the application you want to open said file with.
4) If you want to permanently associate all similar files with a new application, click on the change all button.
