Do NOT update fields in header (Word v.X)

When I create a document, I typically want to keep track of the date that the document was saved. I currently use Insert --> Field --> SAVEDATE to accomplish this, and it works perfectly for that process.

However, I sometimes need to make very small changes to a document and maintain the date in the header as the original save date (as created in the step above).

I have found lots of information about updating fields, but I cannot determine how to _stop_ Word from updating the field when I make & save the changes. Do you have any information on how I can accomplish this? I hesitate to use Insert --> Date & Time (and uncheck the "update" box) because most often I DO want the date to update with each successive change to the document.

I am an inexperienced Mac user, but an experienced MS Office user. I am looking for a point-and-click solution (if possible), as opposed to using programs/macros/etc that will probably be above my head. Thanks for any insight you can provide.
