DVD files and quicktime

I have a load of old private VCR cassettes and would like to put them on DVD.
I have a Panasonic DMR-E30 DVD recorder / player and an intel mini with 10.4. I thought I should have enough kit to do what I wanted.
I CAN record my programme material on DVD-R blanks and these will play quite happily on my mac mini and other plavers.
BUT I can't get the VOB files on the DVD into any state where they can be put into Imovie or IDVD so that I can title or edit them.
I found out about ffmempeg and was able to convert from anything to anything else, apparently, but I always get the error message that Quicktime can't open the file.
Must I assume that the DVD recorder is encrypting the files, despite the fact that I don't need them to be encrypted>
Is there anything I can do about it?
I'd appreciate some help, chaps.

Here are the steps I would follow:
- Rip the DVD into the Mac using Mac The Ripper. This will remove the CSS encryption and save it as a Video_TS file.
- Use Handbrake to convert this file to an MPEG or DivX video.
