I need a free email server for my Mac running 10.1.5. I know I can use send mail but, what other servers are out there that are free and will run on my operating system?

Look in the HOWTO forum. There you'll find information on how to set up sendmail or postfix (for SMTP) and qpopper (for POP3).
I recommend a combination of webmin/Qmail/qpopper for easily configuring and maintaining SMTP & POP3 servers on your OS X system. Directions for webmin installation are also in the HOWTO forum and you can get a Mac OS X package installer of Qmail on Apple's site:
