Encryption

Does anyone know what encryption(if any) that OS X uses on it's dialup password, or passwords in general?

Do you mean on the wire or the ones that are stored in the Keychain? On the wire it depends on the protocol, for instance non-ssl web password generally are terrible. On the disk in the Keychain they are encrypted using AES.
