I allowed two updates this morning: Mac OS X update (PowerPC) & Security update 2007-006 (PowerPC). I got to open Entourage and get the following message - please tell me I haven't lost all my emails? All the other applications open fine.

"This identity cannot be opened with this version of entourage"

Please tell me what steps to take - I'm okay on the computer but would need step by step instructions.

Try downloading the Office updates too, there are a few for version 2004. When in Office go to Help-Check Fro Updates, or go to Mactopia and download them direct from there. Install them in the correct order.
