My powerbook G4 550/512 was taking 25-30 seconds from the time I chose sleep in the menu to when the LCD went dark. Very annoying. I finally managed to narrow the problem down to Norton Utilities 7 and, probably, its filesaver utilitiy. Removed all parts of Norton, restarted and now my powerbook sleeps instantly again. Let me know if it works for you too.
