Font Book not disabling fonts

I have tried to turn off over 75 fonts that I never use in programs like Word or Finale, yet they are still showing up in the font list when I go to change a font. I have tried creating a new Admin account but to no avail.
I have trashed the .plist and have repaired permissions using the start-up disc.
 
Once you turn of the fonts did you then delete the Font cache? Just boot into Safe Mode and then boot back into regular mode. This should delete your user Font cache.
