Having a working server except for the ability to connect to our public external website from within the network it self.

We are able to connect externally to our public website.

I assume this is going to be a DNS issue not pointing to our external host.

Could someone point me the right direction for any tutorial material on setting up Mac OS X server DNS's please.

You have some docs supplies with os x server itself. If you have an internal DNS server, make sure the SERVER itself is configure to point to the external DNS server. If you have no DNS server running now, it most likely is a problem being the proper DNS server address not supplies through your DHCP server to its client (check you firewall for this).
