iTunes, which comes with all operating system 9.1 and above is good for playing music and media files, but only the later versions of iTunes can play movies. For iTunes, open up iTunes then drag your music into the main library, it will copy your music into the iTunes library folder found in the "Music" folder, then just press play. If there is a movie that iTunes or Quicktime player which also come with all Mac OS', then VLC is one of the best programs to use for Movies because it can do almost anything.

If you are playing .mid, .wav, or .mp3 sound files, you can use iTunes to make a playlist and then play from that list. For movies or other sound file types, VLC can make a playlist and play from it.

It really depends if you have a modern Mac. I assume you already knew about the QuickTime Plugins Perian and Flip4Mac. Note that thanks to Microsoft's devote following of the RIAA & MPAA you wont be able to play windows Media 10 or above files because of the DRM laden nature of those files.

After I got these QuickTime plugins i used the same program FStream to stream live radio stations while I am working on my Mac. It work quite well and I really like the simple streaming nature of the program.
