How do I uninstall .pkg files?

In OSX Server, if you went to /System/Library/Receipts there was a .pkg file that corresponded to the .pkgs you installed. Double-clicking these files, otherwise known as receipts, the Installer.app would open and prompt to remove the package. Under OSX Final, the installer.app opens and tries to install the file as though it were a real package.

Does anyone know the correct way to actually unistall .pkg files?

Yes, I know you can drag an app to the trash b/c an OSX Cocoa .app is a folder with all dependencies contained therein, but I'm not talking about just an app. I'm looking for the correct way for OSX to undo any changes the installer scripts instruct the Installer.app to do during installation of a package.
