Here are the programs I am running. They don't seem that fast on this new Mac Book Pro.

Photoshop 7, CS, CS2
Aperature
Fincal Cut HD 4.5

Do I need to wait for the new releases down the road for them to speed up?

Photoshop is definitely PPC-only. I'm not sure about the others. There's an easy way to tell: In the Finder, select the application and choose "Get Info" from the file menu. It will say "Kind: Application", and then the type of application. If it says "Intel" or "Universal", then it's native. If it says "PowerPC", then it's not.

Photoshops (PPC)

Aperature (universal)

Final Cut 4.5 (PPC)

Even the latest Final Cut Studio 5 is (PPC) explains why the rendering times are no quicker

More generally, "Activity Monitor" will show you a "ppc" or "intel" label for running processes.
