iPod Development?

Someone submitted an article to MacTech for last month's magazine. This one was particularly interesting, as the author had found out how the 3G iPods load software and run the little nifty apps like Notes, the games and so on. It is actually very straight-forward (as long as you know SNOBOL and have a tool to rot13 files), and an application was demonstrated that played a quicktime movie to the display. (Note: this only works on the 3G iPods which run something resembling a stripped-down Darwin/QT system)

Now the question is, what can we do to take advantage of this? (i.e. what apps can we provide?) I don't have my 3G iPod anymore, but the possibilities are still interesting.
