iPods and FW800

Just for the sake of curiousity (I don't have a FW800 port on my PB) - Is connecting an iPod via FW800 simply a matter of using the (non-existent) appropriate cable, or would something about the iPod's harddrive or firmware need to be updated for this to be possible?

FireWire 800 is backward-compatible with FireWire 400, so it would just be a matter of getting the correct cable.

Bear in mind, though, that any FireWire 400 device present on a FireWire 800 chain will slow the entire chain down to FireWire 400 speed.

But iPod doesn't have a 6 pin port anymore - just a dock connector.

Correct, because the iPod is FireWire 400. FireWire 400 only goes at FireWire 400 speeds, so connecting it to a FireWire 800 port won't get you any more speed.
 
Even with a FW800 interface, I doubt the iPod will see much speed up in transfer time. FW400 provides a 400 mbps or 50 MB/s transfer speed. That's much faster than what most IDE hard disks can handle. Going to FW800 isn't going to make the hard disk work faster.
