Is there a way to run Snow Leo in a virtual machine on a MBP running Lion?

Lion isn't compatible with older versions of Pro Tools so I'm wondering if I can run it in a virtual machine?

Nope. Not legally possible. VMware had the ability for a very short period of time but retracted. Apple's license does not allow you to run the client version of Snow Leopard virtualized.
