I've installed Tiger and with it iSync 2.0 but when I try and add my iPod as a device, iSync fails to find it.

You no longer use iSync to sync with iPods in Tiger. Contacts, calendars, music and photos are all synced through iTunes 4.8 now.
Once you set up the options in iTunes, though, you can still use iSync to sync the iPod. The iPod must be mounted, and then clicking the "Sync Now" or selecting to sync from the menubar iSync icon will sync the iPod.
