I run 10.4.5 in English, but often correspond in Japanese. Recipients of my Japanese mail cannot read them because, apparently, Mail by default uses Unicode for outgoing messages. I can choose Shift JIS (the most common Japanese encoding) for each individual message, but can't find a global setting. This means that I have to change the encoding every time I send Japanese e-mail. (The global setting is always "Automatic.")
